A Good Gumbo Recipe!

I am going to give you my gumbo recipe. I learned to cook from my mother and grandmother who were born and raised in New Orleans and really knew how to cook. Most of the time, you could not get them to write down their recipes because they used a “pinch” of this and “just enough of that” and “two fingers of water” and so on. This recipe is a combination of both of their recipes which I have added to over the years. My brother cooks his gumbo a little different than mine and like all good cooks; he will tell you his is better.

Sumptuous Christmas Lunch Recipie

Starter
Champagne prawns
Potted prawns make a welcome change from traditional smoked salmon. Serve them with curly Melba toast, savoury biscuits or simple slices of toast.

SERVES 6-8
400-500g shelled raw prawns
2 shallots, sliced
2 pinches ground nutmeg
1/2 teaspoon sea salt
150ml non-vintage champagne
1/2 lemon
100g unsalted butter
Freshly ground pepper, to taste
25g (total weight) chopped parsley and dill, plus sprigs to garnish

An Entire Disney Gang Party Menu With A Unique Twist

The entire Disney Gang all make for great entertainment separately and since there are just so many Disney movies, why not simply celebrate all of them in one party. This allows for a huge number of different ways to have your themed party. You could simply decorate with posters and watch the various Disney movies out there, or you could focus on a specific group, such as pirate themed or space themed, maybe even something as simple as just your favorites. You could just have the main group of Mickey, Minnie, Donald, Goofy, and Pluto. Watching a variety of episodes all the way from Steam Boat Willie on the most recent episodes. Delicious Seafood Recipes

Seared Sea Scallops in Mandarin Sauce

Ingredients:

½ lb U/10 Sea Scallops
1 tbsp Olive Oil
2 ½ oz Mandarin Oranges
1 tbsp Chopped Onions
2 tbsp Green Onions
1 oz Mandarin Juice
4 tbsp Sweet Vermouth
1 tbsp Cold Butter
Pinch Salt & Pepper
Pinch Parsley
Wedge Lemon

Heat up olive oil in medium sauté pan at a medium flame. Sear scallops on both sides until lightly browned. Add your chopped onions, garlic & mandarin oranges and stir while cooking for 1 ½ minutes. Then add sweet vermouth and reduce to a low flame. Add mandarin juice, green onions, and wedge of lemon and let stand for 1 minute. Add cold butter and stir for 2 minutes. Add a touch of Salt, Pepper and Parsley to taste. Serve and Enjoy!

Garam Masala - Exotic Blend To Enhance Your Culinary Experience

Spices have always been the essence of Indian cuisine with the famous garam masala crowning the list. Literally meaning “hot mixture”, it is a wonderful blend of the most aromatic and flavorful Indian spices, and is used not only in India but in many Asian countries and even worldwide.

Pomegranate Chicken Soup

Chicken is always good. It cooks fast and I’ve never seen one soul that wouldn’t eat it. I guess there are such folks. There is always somebody who dislikes fish, turnips (me), asparagus, parsnips (me), and artichokes. But I’ve never met a chicken hater.

As good as chicken is, it can be made better by marinating the critter.

I like to start with a dead chicken but you farm folks do have your preferences. I go to the butcher and I say, “Give me a dead chicken, not one of those blocks of ice—a freshly killed critter.”
